Step 1

Peel the mango and dice the flesh. Place the flesh into a bowl and using a hand blender, blitz the flash for 2-3 seconds so that you have a lumpy sauce.

Peel and destine the avocado and slice the flesh thinly.

Step 3

To assemble your wrap, place a flour tortilla on a dinner plate and spoon on some of the mango sauce on top of it. Spread out the sauce with the back of a spoon.

Step 4

Add some lettuce leaves, followed by the Carroll’s Crumbed Ham and top with some avocado slices.

Step 5

Roll the wrap, making sure to tuck in the ends. Halve the wrap and serve immediately. Repeat with the other wrap. If bringing to work for lunch, wrap each half in cling film or tin foil and keep in a cool place in an airtight container.
