Carroll’s Ham & Pea Potato Salad


Directions

Step 1

Boil the Potatoes in Salted Water for about 10-12 minutes or until tender before draining & letting to cool slightly.

Step 2

Pour boiling water over the peas for 2-3 minutes. Drain and rinse with cold water to stop cooking.

Step 3

Mix the creamy dressing with Dijon mustard if using. Season with salt and pepper.

Step 4

In a bowl, mix the potatoes, peas, radishes, and Carroll’s ham. Add the dressing and gently toss until everything is coated.

Step 5

Sprinkle with fresh herbs and a little extra pepper if you like. Enjoy warm or chilled!
