Chicken Pesto Pasta

Directions
Cook the pasta in salted boiling water according to pack instructions until al dente.
Add the sugar snap peas or green beans for the final 2 minutes of cooking.
Meanwhile, heat the olive oil in a large frying pan over a medium heat and gently cook the garlic for 1 minute.
Add the Carroll’s Signature Roast Chicken Pieces and warm through for 2–3 minutes.
Stir through the pesto and cream until combined.
Drain the pasta, reserving a splash of pasta water, then add to the pan along with the vegetables.
Toss everything together, adding a little pasta water if needed to loosen the sauce.
Finish with grated parmesan, black pepper and fresh basil leaves before serving.
Conclusion
Top Tip: Reserve a little pasta water before draining - it helps create a silky sauce that coats the pasta perfectly. Serving Suggestion: Serve with garlic bread, rocket salad or extra parmesan on top
